Scotch eggs are one of those great British classics that never go out of style — and this version takes them up a notch. Wrapped in a seasoned sausage meat mixture loaded with crispy bacon bits, fresh parsley, and grated cheddar, then coated in golden breadcrumbs and baked until perfectly crisp, these are far from your average petrol station snack.
Whether you’re packing a picnic, putting on a party spread, or just looking for something a bit special to make at the weekend, homemade Scotch eggs are well worth the effort. They look impressive, they taste incredible, and once you’ve made them yourself you’ll never want a shop-bought one again. The bacon and cheese in the sausage meat coating is what really sets this recipe apart — adding little pockets of flavour and texture that make every bite interesting.
Best of all, they can be baked in the oven or cooked in an air fryer, so you can choose whichever method works best for you.

- Cut bacon into tiny pieces (scissors work well) and add to a cold pan
- Cook on medium heat, stirring occasionally, until slightly crispy.
- Place on kitchen towel to absorb excess fat and to cool
- Mix bacon bits with sausage meat, parsley, and cheese until evenly combined
- Divide sausage meat into 6 equal portions, sprinkle flour roll into balls then flatten into a disc shape, turning over & dusting with flour

- Roll into smooth egg shapes
- Coat each egg in flour, roll in beaten egg, cover in breadcrumbs
- Place on a lined baking tray

Tips For The Best Results
- Don’t skip the cold water bath — transferring the boiled eggs straight to cold water stops the cooking process and makes peeling much easier, giving you a clean result
- Start the bacon in a cold pan — this helps the fat render out gradually, giving you crispier bacon pieces without burning
- Drain the bacon well — blotting on kitchen towel removes excess fat, which keeps the sausage meat mixture from becoming greasy
- Flour your hands — when shaping the sausage meat around the eggs, lightly floured hands stop the mixture sticking and help you get a smoother, even coating
- Seal any tears carefully — pinch the sausage meat firmly together to avoid any gaps; this stops the coating splitting open during baking
- Do the full breadcrumb coating — flour first, then beaten egg, then breadcrumbs; each layer matters for that proper crispy crust
- Spray with oil if they look dry — a light spray of olive oil halfway through baking keeps the breadcrumbs golden rather than dry and pale
Variations
- Runny yolk Scotch eggs — reduce the boiling time to around 5–6 minutes for a jammy, soft-centred yolk; handle them gently during wrapping
- Spiced sausage meat — add a pinch of smoked paprika, chilli flakes, or mustard powder to the sausage meat mixture for a bit of heat
- Swap the cheese — Red Leicester or a smoked cheese works really well in place of cheddar
- Use shop-bought seasoned sausage meat — if you’re short on time, a pre-seasoned sausage meat removes the need to add parsley and cheese yourself
- Gluten-free version — use gluten-free plain flour and gluten-free breadcrumbs; the method stays exactly the same
- Mini Scotch eggs — use quail’s eggs for a bite-sized party version; reduce the boiling time to just 2 minutes
- Deep fried version — if you prefer the traditional method, fry at 180°C for around 8–10 minutes until golden and cooked through
Frequently Asked Questions
Can I make Scotch eggs ahead of time?
Yes — Scotch eggs are a great make-ahead recipe. You can prepare and breadcrumb them up to a day in advance, then store them uncooked in the fridge until you’re ready to bake. Alternatively, bake them fully, allow to cool, and refrigerate for up to two days. They’re delicious served at room temperature, which makes them ideal for picnics and buffets.
