Ingredients

  • 6 large eggs
  • 1 pack of sausage meat 400g per pack approx. I use Sainsbury's home brand
  • 2 slices of Bacon-cut into small pieces
  • 100 –120g cheddar cheese finely grated
  • 2 –3 tbsp fresh parsley finely chopped
  • 2 medium eggs beaten (for breading)
  • 1 cup of plain flour
  • 1 pot of golden breadcrumbs approx. 227g
  • Salt & Pepper

Instructions

  • Preheat oven to 200°C (fan 180°C)/Gas Mark 6
  • Bring water to the boil, gently lower in the eggs, and boil for 6–7 minutes
  • Transfer to cold water for 5–10 minutes to stop cooking and make peeling easier
  • Cut bacon into tiny pieces (scissors work well) and add to a cold pan
  • Cook on medium heat, stirring occasionally, until slightly crispy.
  • Place on kitchen towel to absorb excess fat and to cool
  • Mix bacon bits with sausage meat, parsley, and cheese until evenly combined
  • Divide sausage meat into 6 equal portions, sprinkle flour roll into balls then flatten into a disc shape, turning over & dusting with flour
  • Place a peeled egg in the centre of each disc. Fold meat around the egg & seal (pinch any tears).
  • Roll into smooth egg shapes
  • Coat each egg in flour, roll in beaten egg, cover in breadcrumbs
  • Place on a lined baking tray
  • Bake for 25–30 minutes, turning halfway or Air fry 180c for 8-10 mins spray with oil flip/spray and cook for a further 8-10mins approx (check until crispy)
  • If the coating looks too dry when baking, lightly spray with olive oil.
  • Transfer to a wire rack.
