  • 1 small onion finely chopped
  • 6 cherry tomatoes sliced
  • 2 garlic cloves crushed
  • 1 tbsp tomato purée
  • 400 g tin chopped tomatoes
  • ½ tsp dried oregano
  • ½ tsp smoked paprika optional
  • 1 tsp Worcestershire sauce
  • Olive oil
  • Salt & pepper

Instructions

  • Heat a little olive oil in a frying pan over medium heat.

  • Bring a pan of salted water to the boil and cook the spaghetti until al dente.
  • Add the chopped tomatoes to the mince, reduce heat and simmer for 10–15 minutes, add sliced cherry tomatoes stirring occasionally.
  • Drain Spaghetti then toss very lightly with a small spoonful of the finished Bolognese sauce.
  • Plate up a nest of spaghetti, spoon the turkey Bolognese neatly on top, and finish with a generous grating of Parmesan and optional fresh herbs.
